First I want to start with how to pick out, cut and take the pit out of an avocado.
Pick a avocado that is a bit soft and ugly on the outside, kinda green and brown.
Before cutting it squeeze it and make it softer. Then take your knife and cut all the way around to the pit, and pull apart.
I'm the chef today and the photographer. Sorry it's a bit sloppy.
Now take your knife and put it into the pit. This is sort of fun. You should be able to just lift that knife up with the pit on it. If it doesn't just take a spoon and go around the pit a little bit.
Now we have two half's of avocado. To make guacamole I like to now take a spoon and just chop up the avocado in the skin then scoop it into a bowl.
Al's Guacamole (prep time about 10 minutes)
1/4 cup finely chopped white onion (rinsed)
1 med tomato, diced
2 tbs chopped fresh cilantro
2 tsp finely chopped jalapeno (with seeds for hot take some seeds out to cool it down
1/2 tsp salt
2 or 3 Haas avocado
1 tbs fresh lime juice
Now that you have your avocado's pitted and in a bowl, chop and rinse the white onion, dice up the tomato, chop up the cilantro (be careful here. How much you put in depends on how much you like cilantro, it has a very Strong taste. I like a little bit less), chop the jalapeno (remember seed's are hot!), squeeze in the lime.
Now stir and mash all the ingredient's together.
You should end up with something that looks like this.
Cover and refrigerate for up to 4 hours then enjoy.
